In an exciting research project headed by Dr Andrew Jeffs and Dr Austen Ganley, alongside Dr Silas Villas-Boas and PhD student Alastair Harris, sound is being played to yeast to change the nature of the fermentation process. Using different sounds, they aim to speed up the fermentation and potentially alter the flavour profiles of resulting beer. However, not just limited to beer, this research has the potential to be applied to the production of a wide range of industrial materials such as important ingredients for medicines, cleaners and paints.
